Is there a way to show pet names instead of or alongside client names in visit lists?

You can control what the sitter sees using the ADMIN > Preferences > SItter User Interface > Choose Visit List Columns (see below).

You can control what the manager sees in visit lists using the ADMIN > Preferences > Display Preferences > Choose Visit List Columns (a very similar control panel).
